A great accompanyment to a meal, or the perfect dinner for a fussy child who won’t eat veggies!
These will keep in the fridge for a few days, or freeze them and take them out a couple at a time.
Ingredients
2 Courgettes, grated
1 Sweet Potato, peeled cooked, mashed and cooled
2 Eggs
200g Cheese, grated
100g Flour
1tsp cinnamon
1/2tsp ground nutmeg
fresh ground pepper
Method
Mix all the ingredients other than the flour together in a big bowl. Add half the flour at a time and mix until no longer runny. Heat a frying pan to medium heat, with a small dollop of butter. Spoon enough mixture into the pan to make a small cake (bigger than a biscuit but smaller than a pancake). Fry for 5-10min until cooked through turning regularly
Tips and Comments
- The mixture should be quite gloopy, if it is still really runny after mixing all the ingredients together, add more flour
- Depending on your tastes, you could leave some of the sweet potato as chunks, or add in other veggies like butternut or potato
- Adding Paprika and ginger instead of the cinnamon and nutmeg gives a lovely mild spicy flavour
- If you’re like me, then there can never be enough cheese so go crazy with the cheese until you find a volume that you like.
- When making these for adults only, adding a bit of chilli, or pepperdews is also great
